White Pizza with Garlic Arugula Sage & Red Onion

This recipe is vegetarian & GF…and absolutely delicious!

What you will need:

2 Undi’s frozen pizza crusts

White Sharp Cheddar Sauce

    2 tbsp. GF Flour

    2 tbsp. Unsalted Butter

    1 c. Whole Milk

    1 c. Grated Sharp White Cheddar Cheese

    1 tsp. Fresh Ground Black Pepper

    1 tsp. Salt

1c. Grated White Cheddar Cheese

1/2 Red Onion, thinly sliced

2 Cloves Garlic, peeled & thinly sliced

2 handfuls of Fresh Arugula

1 tbsp. Fresh Chopped Sage

For the Sauce:

Heat the 2 tbsp. flour & 2 tbsp. butter on medium heat, in a medium sized saucepan.

If you haven’t made a rue before, this can be intimidating, but it is actually very easy. Just don’t leave the stove, and continue stirring the mixture intermittently with a wooden spoon.

As the rue continues to cook, it will become very liquid and bubble and it will get more brown in color. As soon as this rue begins to turn light brown, you can add the milk. Keep cooking the mixture until it begins to bubble again. Allow it to bubble for three minutes, stirring occasionally, and then add the cheese, pepper, and salt.

Once the cheese is melted and the mixture is smooth, your sauce is done. Just set it aside to cool for a bit while you prepare your toppings. 

To Assemble Your Pizza:

Pre-heat your oven to 350 degrees. Spread a thin layer of the sauce over both frozen crusts, making sure to get the sauce out to the very edge of each crust. Cover the sauce with the cup of shredded cheddar, divided between both pizzas. Add the garlic, red onion, arugula, and sprinkle the chopped sage over the top of your pizzas. Place the pre-heated pizzas in your oven and bake for 30 min. When the pizzas are done, allow them to cool for 10min, then slice and Enjoy!

Willful ignorance is the reason that good German people allowed their neighbors to be dragged off by the Nazis in the middle of the night.
