This recipe is vegetarian, but not vegan.
I don’t know of a vegan blue cheese dressing out there, but if you do, then go for it!
You will need:
1/4 head of Iceberg Lettuce - rinsed, dried, & cut onto a wedge
1/2 Vine Ripe Tomato - diced
1/2 Avocado - diced
1 handful of Broccoli Sprouts
1/2 c. Garbanzo Beans - rinsed & dried
Blue cheese dressing - quantity to preference
Salt & Pepper to taste
Place your sprouts on the plate first, then add some dressing and place the lettuce wedge on your plate. Add the tomato, avocado, & beans. Drizzle with more dressing to your liking and sprinkle with salt and pepper. Enjoy!
