This is an easy to make dish that my family loves. It is also deliciously fresh and healthy, and refined sugar and gluten free.
1 c. brown rice, prepared according to directions
¼ c. olive oil
1 medium sweet onion, diced
3 cloves garlic, minced
2 stalks celery, cleaned and finely chopped
10 mini sweet bell peppers, sliced
2 cans petite-diced tomatoes
1 package frozen peas
1 tsp. black pepper
½ tsp. cayenne pepper
1 tsp. coriander
1 tsp. basil
1 lb. large uncooked shrimp, peeled and deveined
salt to taste
Cook the brown rice according to the directions and set it aside. In a large sauté pan cook the onion, garlic, celery, and peppers in the olive oil, over medium heat, stirring often, for five minutes. Add the Tomatoes, peas and spices leaving aside the shrimp, salt to taste, and feta. Continue cooking the mixture for about five more minutes, until the peas turn bright green. Add the shrimp and cook for two more minutes or until the shrimp turn pink. Remove the mixture from the heat and add the brown rice and salt to taste. Top with feat cheese and enjoy!
