Vegan Green Bean and Mushroom Stir-Fry
The flavor in this recipe comes from the simple delicious ingredients. It is very fresh and healthy, and can be served as a side or as a meal itself.
1 lb. fresh green beans, snapped
8 oz. mushrooms, rinsed, stems removed, and sliced
5 cloves garlic, minced
2 tbsp. olive oil
1 tsp. salt
1 tsp. black pepper
1 tsp. coriander
In a medium sized saucepan bring six cups of water to a boil. Add the green beans to the water and remove the pan from the heat. Stir the beans into the water for two minutes. Drain the beans and set them aside.
In a large sauté pan, over medium heat, cook the mushrooms and the garlic in the olive oil for five minutes. Add the green beans, salt, pepper, and coriander, and continue cooking for five more minutes, stirring constantly. Enjoy!
