Frito Pie

Frito Pie

I am not positive if I made this the same way that my friend’s mother did when we were kids, but that is where I got the idea. It’s not like a pie in any way really, but it is cheesy and delicious, and my kids just gobble it down.

1 package Fritos corn chips

2 tbsp. olive oil
1 lb. ground pork
½ medium yellow onion, diced
3 cloves garlic, minced
½ green bell pepper, diced
2 cans kidney beans, raised and drained
1 can black beans, rinsed and drained
1 c. frozen corn
1 c. carrots, peeled and diced
2 cans tomato sauce
1 tbsp. Worcestershire
1 tbsp. chili powder
1 tsp. oregano
1 tsp. black pepper
1 tsp. coriander
1 tsp. saracha
salt to taste

2 c. grated cheddar cheese

Spread the corn chips in the bottom of a large oven-safe baking dish. In a large saucepan sauté the onion, garlic, green pepper, and carrot in the olive oil for five minutes. Add the pork and continue to sauté the mixture, stirring often, for seven more minutes. Add the tomato sauce, beans, corn, Worcestershire, saracha, chili powder, oregano, pepper, and coriander, and continue cooking until the mixture starts to boil. Reduce the heat to medium-low, and continue to cook for ten more minutes, stirring often. Salt to taste, and remove the chili from the heat.

Pour the chili mixture over the Fritos in the baking dish and top the dish with the grated cheese. Bake the Frito pie in a three hundred and fifty degree oven for fifteen minutes. Enjoy!

Crustless Pumpkin Pie

This sophisticated version of pumpkin pie is amazingly smooth & rich. It is also Gluten-Free & free of Refined Sugar. 


29oz pumpkin puree - 1 lg. can
1 stick unsalted butter - softened
8oz cream cheese - softened
5 eggs
1 tbsp. vanilla extract
1 tsp. pumpkin pie spice
1/2 c. honey
1 c. GF flour 

Whipped cream:

1 c. heavy cream
1 tsp. vanilla extract

Honey to drizzle on top.

Making it Happen:

Combine all of the ingredients for the pie in a mixing bowl and mix on medium speed until well combined. When the batter is smooth, pour it into a greased 9x13 baking pan and bake in an oven pre-heated to 350 degrees for one hour.

Allow the pie to cool for 30 minutes before slicing.

To make the whipped cream, blend the chilled heavy cream in a chilled bowl on high speed until it begins to thicken, add the vanilla and continue blending until the cream is thick. 

Plate pie with whipped cream & drizzle with honey. Enjoy!
