Fresh, Low-Carb, Cream of Broccoli Soup
Just a couple of easy techniques help to make this simple soup fresh and healthy. And yes, even my kids will eat it.
1 lb. broccoli, cleaned and cut into small pieces
3 cloves garlic, minced
2 tbsp. olive oil
1 can chicken broth
1 c. heavy cream
1 tsp. pepper
1 tsp. coriander
salt to taste
shredded cheddar cheese
Boil six cups of water in a medium sized pan. Remove the water from the heat and add the broccoli. With a large spoon, stir the broccoli in the scalding water for one minute. Drain the broccoli and transfer it to a blender. Add the can of chicken broth to the blender and blend the mixture on high speed for two to three minutes, or until it is smooth.
In the same medium sized saucepan, sauté the garlic in the olive oil for one minute over medium heat. Add the contents of the blender to the pan and then add the cream, pepper, and coriander. Continue cooking for about three minutes, until the mixture begins to steam. Remove the soup from the heat and salt to taste. Top with cheddar cheese, and enjoy!
