Vegan Roasted Pepper and Avocado Pasta
This delicious and healthy dish is quick and easy to make. It is vegan and gluten free and can be served hot or cold.
20 mini sweet bell peppers, halved and seeded
1 medium red onion, sliced
5 cloves garlic, minced
1 tsp. salt
1 tsp. pepper
1 tsp. coriander
1 tsp. basil
1 tsp. oregano
½ c. olive oil, divided
1 package gluten free pasta
1 ripe avocado, diced
Place the peppers, onions, garlic, and spices on a piece of aluminum foil and wrap them up in a bundle. Drizzle half of the olive oil over the veggies. Seal the foil well and place it on a cookie sheet. Bake the bundle in the oven at three hundred and fifty degrees for thirty minutes.
Cook and drain the pasta. Add the remaining olive oil, avocado, and roasted veggies and toss well. Serve hot right away, or chill for one hour and serve cold. Enjoy!
