Spicy Steak Quesadillas
My kids love this spicy cheesy recipe. It is quick and easy to make, and always a big hit in our house.
1 lb. flank steak, sliced into thin strips
1 tbsp. saracha
1 medium yellow onion, thinly sliced
3 cloves garlic, minced
¼ c. olive oil
1 tsp. black pepper
1 tsp. salt
1 tbsp. taco seasoning
1 tsp. coriander
8 oz. swiss cheese, sliced into strips
In a medium sized bowl, combine the steak, onion, garlic, and all of the spices. Allow to marinate for at least thirty minutes, stirring every five or ten minutes. In a medium sized sauté pan, over medium heat, cook the steak in its sauce for five to ten minutes, until the steak is cooked through and the onions are transparent.
In a separate skillet, heat a small amount of canola oil and brown a tortilla on one side. This takes about three minutes. Flip the tortilla over and top with three to four strips of swiss cheese. Continue cooking until the cheese has melted. Top with a small amount of the steak and fold over to eat. Enjoy!
