This is the best way to make gravy. It contains no flour and requires a lot of time and attention. The pay off is a gravy that is so delicious, it is beyond words.
4 c. turkey drippings (or 4.c chicken or vegetable broth)
4 cloves garlic, minced
4 c. chopped mushrooms, stems removed
1 stick unsalted butter
1 tsp. black pepper
2 c. heavy cream
salt to taste
In a large saucepan cook the mushrooms and the garlic with the butter, over medium heat, for five minutes. Add the drippings and pepper, and continue cooking for forty five minutes, stirring often. Reduce the heat to low, add the cream and continue cooking for another fifteen minutes, stirring often. Salt to taste, and serve over meat and potatoes. Enjoy!
