Broccoli with Cheddar Garlic Sauce
This is a great recipe to try if you have a kid who won’t eat broccoli. I like my broccoli blanched and after nine years I finally made my son try it that way. Bingo, he loved it. There is something that turns children off about the flavor of well cooked vegetables, and it is a good instinct, because the more lightly they are cooked, the more vitamins and minerals they contain.
1 lb. broccoli florets, rinsed and cut into bite sized pieces
2 tbsp. butter
2 tbsp. gluten free flour
2 c. half and half
3 cloves garlic, minced
1 tsp. salt
1 tsp. pepper
2 c. grated cheddar cheese
In a small saucepan, over medium heat, melt the butter and then add the flour. Cook for three minutes until smooth. Add the half and half, salt, pepper, and garlic and continue cooking for seven more minutes, stirring often. Add the cheese and cook for three more minutes, or until smooth.
To blanch the broccoli, boil six cups of salted water in a large saucepan. When the water comes to a boil, remove it from the heat and add the broccoli. Use a large spoon to stir the broccoli into the water for one to two minutes. Drain the broccoli and serve with the cheddar cheese sauce. Enjoy!
