Vegetable and Feta Penne
This is a vegetarian dish, and gluten free if you use gluten free penne, which is becoming easier to find all of the time. I am extremely fond of the Mueller’s brand penne. It can be found in the regular pasta aisle in most stores, it comes out perfectly al dente. My husband had to fight my kids for his serving.
1 box gluten free penne
1 small yellow onion, diced
3 cloves garlic, minced
½ stick butter
8 oz. white mushrooms, cleaned and sliced
6-8 mini sweet bell peppers, or one small red bell pepper, thinly sliced
1 package fresh washed broccoli, or 1 small head, cut into bite-sized pieces
1 tsp. black pepper
1 tsp. dry parsley
1 tsp. basil
1 tsp. coriander
4 oz. crumbled feta cheese
salt to taste
Prepare the pasta according to its directions and then set it aside.
In a large skillet over medium heat, sauté the garlic, onion, and mushrooms in the butter for five minutes, stirring often. Add the bell peppers, broccoli, black pepper, parsley, basil, and coriander and sauté for three more minutes. Remove the vegetables from the heat and add the pasta and feta, combine well and salt to taste. Enjoy!
