Savory Lentils with Bacon
This is a comfy dish that is wonderful to make on a rainy day. It doesn’t require a great deal of work but does demand a bit of cooking time. The time put in is well worth it.
1 package dry lentils, rinsed and drained
1 medium yellow onion, diced
3 cloves garlic, minced
3 sticks celery, finely chopped
2 carrots, peeled and finely chopped
8 strips of bacon
1 tsp. coriander
1 tsp. black pepper
2 cans chicken broth
6 c. water
salt to taste
Cut the strips of bacon in half and cook them in a large saucepan over medium heat until the bacon is cooked through. Remove the bacon from the pan and set it aside on paper towels to drain. Add the onion, garlic, carrot, and celery to the bacon grease that remains in the saucepan. Cook the vegetables over medium heat for five minutes, stirring often. Add the water, broth, lentils, coriander, and pepper to the saucepan. Continue cooking the lentils over medium heat until they come to a boil. Reduce the heat to low and allow the lentils to cook for an hour, stirring occasionally, until the lentils become soft and the broth thickens. Add salt to taste.
Chop the bacon into fine pieces. When the lentils are done cooking top them with sour cream and fresh bacon. Enjoy!
