Buffalo Turkey Salad
This salad combines all of the flavors of hot wings with turkey. I love how spicy and crunchy it is, not to mention cool and fresh. I kept going back for more. This salad is also perfect for filling a lettuce wrap, or to dip with chips or crackers.
1 lb. cold cooked turkey, cubed
4 stalks celery, cleaned and thinly sliced
3 medium carrots, cleaned and shredded into long strips
2 oz. crumbled blue cheese
1 tsp. pepper
½ c. Sweet Baby Ray’s Buffalo Wing Sauce
1 c. mayonnaise
To prepare the carrots cut off the ends and peel them to remove the outside as you normally would. Then, continue using the peeler in order to create long shaved strips of carrot. I always have some excess left from the middle of the carrot when I am done.
Combine all of the ingredients well in a medium sized bowl. Cover the salad tightly and allow it to chill for at least an hour before serving in the fridge. Enjoy!
