Purple Smashed Potatoes
Purple potatoes are a little sweeter than most potatoes, and have become more widely available in grocery stores lately. This is a quick, delicious recipe, and my children gobble these guys right up.
About twenty miniature purple potatoes
¼ c. parmesan cheese
¼ c. mayonnaise
2 tsp. salt
2 tsp. black pepper
2 tsp. garlic powder
Frist boil the potatoes over medium high heat for about fifteen minutes on the stove. Drain them well and them set them out on a cookie sheet lined with aluminum foil. With something flat, like the bottom of a drinking glass, smash each one of the potatoes until it is about a half an inch thick. Brush a layer of mayonnaise onto the top of each potato, and then sprinkle them all with the salt, pepper, and garlic powder. Bake the potatoes in a three hundred and fifty degree oven for twenty minutes. Enjoy!
