Three Cheese Cauliflower Casserole
This is a delicious casserole and a great way to sneak in a
veggie on the kids. Cauliflower is lower in carbohydrates and higher in fiber
than potatoes or rice.
1 large head of cauliflower
½ stick butter
1 tsp. salt
1 tsp. pepper
1 clove garlic, minced
1 c. parmesan cheese
1 c. cottage cheese
1 c. heavy cream
six slices American cheese
Cut the cauliflower into florets and then steam it on the
stove over high heat for five to seven minutes. If the cauliflower breaks off
easily when poked with a fork it is done. Transfer the cauliflower to a large
mixing bowl; add the butter salt and pepper. With a mixer, mash the cauliflower
on low speed until is broken down and has a smooth texture. Add the parmesan, garlic,
cottage cheese, and the cream. Blend the mixture on low until is smooth, then
transfer it to a large baking dish. Lay slices of American cheese over the top.
Bake in the oven for one hour at three hundred and fifty degrees. Allow to cool
for ten minutes before serving. Enjoy.
