Ginger Teriyaki Beef & Green Beans
This is a delicious, fresh, spicy dish. If you do not like spicy you can leave the saracha out to eliminate the heat. Or if you are like us, you can add more.
1 lb. beef, thinly sliced (I used top round for this recipe)
½ yellow onion, sliced
3 cloves garlic, minced
1 tsp. fresh ginger, grated
½ bunch fresh cilantro, well rinsed, removed from stems, and chopped
¼ c. soy sauce
¼ c. teriyaki sauce
2 tbsp. sesame oil
6 mini sweet bell peppers, sliced
1 tsp. saracha
1 tsp. black pepper
1 bag frozen green beans
In a medium sized bowl combine the teriyaki, soy sauce, sesame oil, garlic, ginger, pepper cilantro, and saracha. Add the beef and the onions and gently fold them into the marinade. Let the beef rest in the marinade for at least one hour, folding the mixture occasionally.
In a large sauté pan cook the beef onions and marinade mixture over medium heat. Add the peppers and continue to cook for about ten minutes. Finally add the green beans and continue to cook for about ten minutes, or until the beans are done.
This can be a very healthy dish. I served it over a wild rice and quinoa mixture which was delicious. Enjoy!
