Cupcake Pizzas



These are easy and fun to make and they are also adorable. Of course any topping desired can be added to them, but I find that kids rarely want anything on their pizza besides pepperoni…some husbands too.



I package GF pizza dough (I use Bob’s Red Mill.)
Extra Olive oil
1 jar thick spaghetti sauce, or pizza sauce
2 packages shredded cheese
1 package pepperoni





We are gluten free; so we use gluten free pizza dough. If this isn’t a necessity for you any sort of dough can be used. If you are lucky enough to have a Publix nearby, they carry excellent fresh pizza dough in their bakery.










Make your dough according to the directions. Grease two muffin pans with a generous layer of olive oil. Spoon in the pizza dough to fill each muffin cup half way. Spoon a layer of sauce into each cup, and then top each cupcake with cheese and pepperoni.







Bob’s Red Mill dough requires that you bake it without toppings for seven to nine minutes before adding the toppings and then returning it to the oven for about eighteen minutes. This is a good idea with any sort of dough; it ensures that the dough will not be soggy. This recipe makes twenty-four pizza cupcakes. Enjoy!

Crustless Pumpkin Pie

This sophisticated version of pumpkin pie is amazingly smooth & rich. It is also Gluten-Free & free of Refined Sugar. 


Ingredients:

29oz pumpkin puree - 1 lg. can
1 stick unsalted butter - softened
8oz cream cheese - softened
5 eggs
1 tbsp. vanilla extract
1 tsp. pumpkin pie spice
1/2 c. honey
1 c. GF flour 






Whipped cream:

1 c. heavy cream
1 tsp. vanilla extract




Honey to drizzle on top.





Making it Happen:

Combine all of the ingredients for the pie in a mixing bowl and mix on medium speed until well combined. When the batter is smooth, pour it into a greased 9x13 baking pan and bake in an oven pre-heated to 350 degrees for one hour.





Allow the pie to cool for 30 minutes before slicing.




To make the whipped cream, blend the chilled heavy cream in a chilled bowl on high speed until it begins to thicken, add the vanilla and continue blending until the cream is thick. 





Plate pie with whipped cream & drizzle with honey. Enjoy!
