Chocolate Peanut-Butter Sugar Cookies
This is a gluten-free and flour-free recipe. We used Hershey’s Bliss chocolates for the center of the cookies. We cut them in half this time for an interesting shape. Kisses also work great as well as almost any bite-sized chocolate. My kiddos have a big time making these cookies as well.
2 c. natural peanut butter
2 c. granulated sugar
2 tsp. vanilla
1 tbsp. baking powder
1 tsp. almond extract
½ tsp. salt
2 tbsp. cocoa powder
1 bag bite sized chocolate candies, cut in half on the diagonal
Combine all of the ingredients except the chocolate candies in a mixing bowl. Use a mixer set on medium speed. Cover a cookie sheet with parchment or wax paper. Roll the dough into balls that are about 1.5 inches wide. Space them evenly apart on the sheet and bake them in the oven for thirteen minutes at three hundred and fifty degrees. When they come out of the oven, carefully press a chocolate piece into the middle of each cookie, and then let them cool. We made three baker's dozens with this recipe. Enjoy!
