Summer Tuna Salad
This is a fun tuna salad that can easily serve two for lunch. It is easy to put together, and there is no cooking required if you boil your eggs ahead of time.
3 oz. chunk light tuna, drained
2 tbsp. mayonnaise
1 tsp. pepper
1 tbsp. minced yellow onion
1 scallion, thinly sliced
½ avocado, sliced
1 roma tomato, sliced
about 3 oz. mozzarella cheese, cubed
about 2 oz. pepperoncini, drained and sliced
4 oz. garbanzo beans, drained
1 boiled egg, peeled and thinly sliced
vinaigrette dressing, to taste
salt, to taste
Get all of your ingredients sliced and prepared. Put the tuna in a small bowl with the onion, scallion, pepper, and mayonnaise. Combine well. When the tuna is prepared you can put it and all of the other ingredients on a large plate. Sprinkle the egg, tomato, and avocado with salt to taste, and drizzle vinaigrette dressing over the salad. I used a lemon vinaigrette that I love. Enjoy!
