Parsley Bean Salad
I’ve been posting a lot of salads. I love salads when it is hot outside. This is one that I have made for a long time, and it is always a hit.
1 head parsley, cleaned, stems removed, and chopped
1 can red beans, rinsed and drained
1 can garbanzo beans, rinsed and drained
1 can black beans, rinsed and drained
1 c. cold cooked corn, fresh or frozen
1 avocado, diced
½ medium yellow onion, minced
2 tbsp. red wine vinegar
2 tbsp. lemon juice
2 tbsp. olive oil
1 tsp. salt
1 tsp. ground black pepper
Combine all of the ingredients in a large bowl. Let rest for at least an hour, stirring occasionally so that the beans are well saturated with the dressing mixture. This dish is best served chilled. It pairs well with grilled chicken or pork chops. Enjoy!
