Ham and Mushroom Grilled Tortillas
This is another one of my non-grilled cheeses. It is a little sweet and very savory, and super delicious. If you serve it with a summer salad, it will make for a fantastic lunch.
small corn tortillas
swiss or mozzarella cheese
4 or 5 medium white mushrooms, sliced
½ medium yellow onion, sliced
3 cloves garlic, minced
4 oz. cooked ham, sliced
1 tbsp. unsalted butter
1 tsp. black pepper
salt to taste
Melt the butter in a medium skillet over medium heat. Add the mushroom, ham, onion, and garlic. Sauté for about ten minutes until the liquid is cooked out of the mixture and the ham and mushrooms are slightly browned. Remove from the heat and set aside. When it has cooled check the flavor and season with salt as needed.
In a small skillet over medium heat add a few drops of oil and a corn tortilla. Brown the tortilla on one side and then flip it and add a few pieces of the cheese. When the cheese is melted remove the tortilla to a cutting board. Repeat the same process with a second tortilla. While it is cooking scoop some of the ham mixture onto the first tortilla. When the second tortilla is ready flip it over to sandwich the ham mixture between the two tortillas. Cut into quarters and serve. Enjoy!
