Greek Chopped Salad.

            We love salads in our house. My youngest daughter is the only one who refuses to come on board. I know that it will happen one day. This is a recipe that I threw together on a whim. I am eating it now and it is delicious! I’m not to going to set any amounts for the ingredients. As a basic rule just be sure that the amount of lettuce you are using equals the total amount of all the other ingredients combined.

romaine lettuce
roma tomatoes
kalamata olives
white onion
hard salami
crumbled feta cheese
garbonzo beans
salt & fresh ground pepper
vinaigrette dressing

            You basically want to dice everything. My preference is to get each ingredient as small as I can because then I get more flavors in each bite that I take. My mother is one of those people who loves great big chunks of vegetables in her salad. Make yours however you prefer. After you have all of your lettuce, tomato, olives, onion, cucumber, perreroncini, and salami chopped up, add the garbanzo beans and feta. Sprinkle on salt and pepper then toss with your favorite vinaigrette. Today I tried a new one that just came out in my grocery store. It’s called Simply Dressed Lemon Vinaigrette and it’s made by Marzetti. It is very clean and fresh tasting and I loved it on this salad. Enjoy!

I watched a woman say these words in a speech a few moments ago and nothing could be more true...willful ignorance is insanely powerful. Willful ignorance is the reason that good German people allowed their neighbors to be dragged off by the Nazis in the middle of the night. It is the reason that American people choose to believe our homeless are lazy and irresponsible instead of facing the reality that their situations have arisen because of widespread mental illness and cooperate greed. It is the reason that you will pick up a steak on your way home from work tonight, not bothering to find out where it came from, because you just don’t want to know. The truth is too disgusting.
I have gone on about the meat industry quite a bit and my goal here is not to do that. I love to eat meat, I will state that again, but the example that comes from our consumption of factory meat is so powerful when it comes to explaining willful ignorance that I want to use it.
