Curry Chicken Salad
This is a great summer recipe. The way that the flavors combine is amazing. I eat it plain, my husband likes to scoop it up onto crackers and eat it. It also makes a fantastic sandwich.
3 chicken breasts, boiled, trimmed, and shredded
1 ½ c. mayonnaise
4 celery stalks, thinly sliced lengthwise
½ medium yellow onion, minced
½ c. raisins
1 tsp. black pepper
1 tsp. curry powder
½ tsp. coriander
Boil and prepare your chicken. Cut up the celery and onion. Combine all of the ingredients in a large mixing bowl. You will have to use a little elbow grease to get everything mixed together well. Let the mixture rest, covered, in the fridge at least an hour before serving. Enjoy!
